Ketchup? Catsup? Yes! that famous sauce that you can find in every supermarket, we also make it at home. And yes, surprisingly, it’s even better than you ever imagine.
It’s not difficult and, of course, homemade ketchup is much healthier than bottled ketchup. Combines well with any burger and even better with fries, that you can make following this other recipe.
By the way, Catsup is simply an adaptation to Spanish of ‘Ketchup’ and ‘Ketchup’ is nothing more than an adaptation to English from the Chinese word Ke-tsiap.

Put the tomatoes in to the oven to roast them. Remove when the skin starts to get a roast dark color. Then, remove the burned parts, add a few drops of olive oil and crush blend in the puree hand machine. You can do it with Thurmix, but the texture won’t be the same.
Besides the smoky taste, what make this Ketchup special, is the bittersweet touch, so let’s go for it! Add the Modena vinegar, brown sugar, paprika “de la Vera”, black pepper and a pinch of salt. If you want to go further, you can also add some citrus or some spices like cinnamon or nutmeg. Whip everything with a hand whisk and that’s it!
