We start peeling and chopping the onions in julienne strips. Then we put them in a small pot with olive oil and a pinch of salt. Let the onions cook slowly and stir them for about 30 minutes, you will see how they gradually become soft and brown.
We add the brown sugar, a trickle of vinegar and mix everything well. Let it simmer for another 30 minutes, so that the onion and the sugar caramelize together. Continue stirring the onions until they turn to a delicious golden brown!

Beer caramelized onions
The addition of beer to the onions gives them a more intense note, thanks to the bitterness of the ale.
For this recipe we will need 6 sweet onions, 100 cl of beer (any brand you prefer, we prefer Moritz Epidor), 100 grams of brown sugar, and 1,5 tablespoon of butter and salt.
Cut the onions into julienne strips and add them to a pan with the butter already melted. Maintain on a medium heat until golden brown. After a few minutes, add the sugar and stir to caramelize until they’re dark brown. At this point, add the 100 cl of beer and keep it on a low heat until the liquid completely evaporates.
Caramelized onions with goat’s cheese
For this recipe, we will use 3 onions, rolled goat’s cheese, 50 grams of sugar and olive oil. This time, the perfect marriage of the cheese and onions will blow you away.
The idea is to caramelize the onions following the traditional recipe. Then, cut the goats cheese into rings and place it on hot toasted bread with a spoonful of caramelized onions on top. This is a quick and easy way to prepare a delicious snack. Crunchy, creamy, sweet, salty … in one bite!
Caramelize the onion in the oven
It is also possible to caramelize the onions in the oven. It’s an alternative that requires less attention for people who are too busy to cook or clean but it doesn’t taste as good as in a pan.
We will need 2 onions, a glass of white wine, 100 grams of brown sugar and olive oil. Preheat the oven to 180 degrees. Fill a container with water and place it, covered, for 10 minutes in the oven. Open the oven, add a drizzle of olive oil and the onions chopped in julienne. Let it cook for another 10 minutes before introducing the white wine and the sugar. Cover and let it boiled for another 10 minutes, until the liquid evaporates.
