Hand made with natural ingredients, our Brava is based on 3 critical ingredients: Pimentón de la Vera (a dried and smoked pepper from Spain), vinegar from Jerez and the fresh toasted garlic.

Where it comes from and who invented is not clear, but it’s a classic Spanish sauce especially with potatoes. At Bacoa, after having done many tests, we think we have created the perfect Salsa Brava.
Our Brava sauce, along with the other homemade sauces (our Spicy Brava and the Roast Tomato Ketchup), is always on the tables ready to accompany our hand-cut potatoes and burgers.

The secret of our home-made alioli
Elaboration
After heating some oil in a pan, add the garlic, the onion and the pepper thinly sliced together with the salt and the sugar.
Cook it on a low heat and once it is tender, add the “pimentón” and the cayenne, taking care that they don’t burn. Add the lemon juice and the vinegar and let it simmer.
Finally, incorporate the tomato, once it is blended, and let it cook for 3 hours aprox. until you have the desired consistency.
